Audit Food Safety Management Systems With Evidence, Not Assumptions

This is a Lead Auditor course for professionals who need to assess whether an ISO 22000 food safety management system works in practice: across hazards, prerequisite programmes, traceability, validation, verification and continual improvement.

Plan a credible audit

Set scope, criteria, audit objectives, sampling approach, timetable and interview plan before the audit begins.

Test real FSMS evidence

Follow evidence through hazard controls, PRPs, traceability, monitoring, corrective action and documented information.

Report findings clearly

Write evidence-led nonconformities and communicate practical follow-up actions without overreaching.

A clear distinction

ISO 22000, HACCP and Lead Auditor: What This Course Actually Covers

HACCP is central to food-safety control, but this route is broader than HACCP training. ISO 22000 provides a food safety management system framework for organisations in the food chain. The Lead Auditor route focuses on assessing that system against audit evidence.

HACCP

Hazard-control thinking

Identify hazards, define controls and manage critical control points where appropriate.

ISO 22000

An FSMS framework

Connect HACCP principles with prerequisite programmes, leadership, communication, planning, performance and improvement.

Lead Auditor

Independent assessment

Plan and conduct an audit, gather evidence, evaluate conformity, write findings and follow up.

Not a shortcut

Not basic food-handler training

This route suits people auditing or leading FSMS work, not people simply seeking introductory food hygiene certification.

Who should attend

Who This ISO 22000 Lead Auditor Course Is For

The route is for professionals who already understand food safety concepts and want a structured audit role across food production, processing, storage, distribution, catering, packaging or supplier operations.

Food safety and quality professionals

Food safety managers, QA/QC leaders, FSMS coordinators, hygiene and compliance professionals.

Internal auditors and consultants

Professionals responsible for audit programmes, supplier audits, certification-readiness reviews or management-system assurance.

Operations and supply-chain teams

Production, warehousing, procurement, technical and distribution professionals who need stronger FSMS audit judgment.

PECB lists a fundamental understanding of food safety concepts and comprehensive knowledge of FSMS audit principles as prerequisites. If your background is earlier-stage, we will discuss the right preparation path honestly before you enrol.

What auditors test

Build an Evidence-Led FSMS Audit Method

A strong audit does not just check whether a procedure exists. It tests whether controls are understood, implemented, monitored and improved.

Audit area What you learn to examine Examples of useful evidence
Hazards and controls Whether hazard analysis, control measures and monitoring decisions are justified and operated. Hazard analysis, control plan, monitoring records, corrective actions and validation support.
Prerequisite programmes Whether hygiene, sanitation, pest control, maintenance and personnel practices support safe operations. Cleaning records, inspection results, training records, maintenance logs and site observations.
Traceability and recall Whether product, ingredient and supplier information can be traced and acted on when needed. Batch records, supplier documentation, trace exercises, withdrawal or recall drill evidence.
Verification and improvement Whether the FSMS is evaluated, reviewed and improved rather than maintained as paperwork. Internal-audit results, trend data, management review, nonconformity and corrective-action evidence.

Course, Examination and Credential: The Full Route

Completing training, passing an examination and qualifying for a specific PECB auditor credential are connected, but they are not the same thing.

01. Course

Complete the training

Build FSMS and audit capability through the course, exercises and structured revision.

02. Exam

Take the PECB exam

Current PECB course conditions include examination fees and one eligible retake within 12 months after a first failed attempt.

03. Pass

Receive the result

Passing the examination demonstrates the required exam competence; it does not by itself establish experience.

04. Credential

Apply at the right level

Apply for a PECB credential at the level your documented professional and audit experience supports.

For example, PECB’s current Lead Auditor credential requires five years of professional experience, including two years in food safety management, and 300 audit activity hours. PECB controls the current rules; we will explain the relevant route before payment or application.

What Saudi Food Safety Professionals Valued

“We worked through audit planning, food-safety hazards, prerequisite programmes, HACCP controls, traceability and nonconformity reporting. The examples helped me assess whether an FSMS is operating effectively, not simply confirm that documents are available.”

Hind Abdullah Al-Qahtani

Food Safety & Quality Assurance Manager, Riyadh

“The LMS and recordings helped me repeat difficult areas such as hazard-control plans, validation, verification and emergency-response requirements around a full-time role. Trainer support during question reviews improved my Lead Auditor approach.”

Arun Joseph Mathew

Senior Food Safety and QHSE Specialist, Riyadh

“The corporate audit exercises covered manufacturing hygiene, supplier controls, traceability, allergen management and product-recall readiness. Our team gained a more consistent method for evidence, findings and audit preparation.”
